Ingredients
1) Brinjol(Baingan) - 5
2) Potato(Aloo) - 1 big or 2 small ones
3) Onion - 1 medium size
4) Green Chillies - 2
5) Garlic - 2 cloves
6) Curry Leaves - 3
7) Coriander Powder - 2 spoons
8) Red Chillies - 2
9) Chana Dal - 3gms
10) Urad Dal - 3gms
11) Mustard Seeds - 3gms
12) Cumin Seeds(Jeera) - 3gms
13) Oil - 2 spoons
14) Salt - as per taste
Procedure
1. Cut Brinjol into medium sized pieces and soak it in salt water.
2. Cut potato, oninons, green chillies, garlic and keep them ready.
3. Take oil in pan and heat it. Add mustard seeds to the pan.
4. Once the seeds start spluttering add jeera, chana dal, urad dal, red chillies and saute until jeera splutters and the urad dal turns light brown.
5. Add garlic, green chillies and onion to the pan and saue until onions turn light pink.
6. Add curry leaves and mix the ingredients well.
7. Add Coriander powder to it and stir well. after few mins add salt and mix it well.
8. Add Aloo and then fry them in the mixture for 2 mins.
9. Drain water from baingan and add them to the pan and fry all the ingredients for 3 minutes keeping at medium flame.
10. Add water to the mixture(quantity : until all the ingredients are submerged) and mix thouroughly.
11. Keep the flame at low and close the pan with lid and simmer it for 10 mins. In between keep mixing the ingredients.
12. Once the aloo is properly cooked(should be soft) turn off the stove.
13. Aloo Baingan Masala is ready and serve hot.
Note: It is known as Vankaya Bangaldumpa koora in Telugu.
