sesame cabbage

sesame cabbage
Ingredients
1) cabbage - 250gms.
2) sesame powder - 11/2 spoons.
3) mustard seeds - 2gms.
4) chana dal - 3gms.
5) urad dal - 3gms.
6) cummin seeds - 2gms.
7) oil - 1 spoon.
8) salt - as per taste.

Procedure
1. Finely chop the cabbage into small pieces and soak them in water for 2 mins.
2. Boil the cabbage until they are soft. If using MicroWave for boil 8 mins is sufficient.
3. Once boiled drain the water and keep the cabbage aside.
4. Take oil in a pan and heat it. Add mustard seeds to it.
5. Once the seeds splutter add cummin seeds, chana dal and urad dal to it and fry them until the urad dal turns slight brown.
6. Add the cabbage to it and fry the cabbage for 2 minutes.
7. Add salt to it and mix well.
8. Fry the cabbage until the water remnants in the cabbage are dried and becomes soft.
9. Add sesame powder(click here to see its preparation) to the cabbage and mix all the ingredients thoroughly and heat for 3 minutes.
10. sesame cabbage is ready and serve hot.

Note: It is known as cabbage noolugunda koora in telugu.

sesame powder
Ingredients
1) sesame seeds(white) - 400gms.
2) red chillies - 10.

Procedure
1.Take the sesame seeds and red chillie into a pan and heat it(dry roast).
2. Heat it until all the seeds turn light brown. Keep the flame in medium and keep stirring the ingredients to ensure that they are not over heated.
3. Once heated, turn off the stove and cool it down.
4. After they are cooled, take a mixer and add these to the mixer jar.
5. Grind them into fine powder. Ensure the they are not over grounded or else oil might start coming from the seeds.
(In general one turn of the mixer is enough to get a fine powder.)
6. sesame powder is ready.

Note: It is known as noolugunda or nuvvulapodi in telugu. It is used as masala in various vegetables like cabbage, ridge gourd, bottle gourd etc.
                         

cucumber dal (kheera dal)

cucumber dal
Ingredients
1) cucumber(yellow) - 1 small one.
2) toor dal - 1 cup.
3) green chillies - 2.
4) curry leaves - 4.
5) garlic - 1 clove.
6) ginger - 2gms.
7) turmeric powder - 1/4 spoon.
8) mustard seeds - 2gms.
9) cummin seeds - 2gms.
10) chana dal - 4gms.
11) urad dal - 2gms.
12) asafoetida(hing) - 1/4 tea spoon.
13) oil - 1 spoon.
14) salt - as per taste.
15) red chilli - 1.

Procedure
1. Cut the yellow cucumber into small pieces(remove the seed part of it), green chillies.
2. Take Dal in cooker(wash the dal in water before using it) and add chopped cucumber, green chillie, 2 curry leaves and turmeric powder.
3. Add 2 cups of water to it and boil them in cooker. After 5 whistles of cooker reduce the flame to low for 2 minutes.
4. Meanwhile cut garlic, ginger and keep the remaining ingredients ready.
5. Take oil in a pan nad heat it.
6. Add mustard seeds to it and once they splutter add cummin seeds, red chilli, chana dal, urad dal, curry leaves and fry the mixture.
7. Add hing to it and fry them.
8. Meanwhile onec the pressure in the cooker is out, remove the lid and add some water to the dal and heat it again without the lid.
9. Add salt to the dal and mix properly and can smash the dal while it is heated.
10. Pour the dal into the pan and mix all the ingredients thoroughly and boil it for 2 minutes.
11. cucumber dal is ready and serve hot.

Besan Gobi

Ingredients
1) CauliFlower(Gobi) - 500gms
2) Besan(ChickPeas Flour) - 1/2 cup
3) Corn Starch - 1/4 cup
4) Onion - 1
5) Tomato - 1 big
6) Green Chillies - 3
7) Curry Leaves - 4
8) Red Chillies - 1
9) Red Chilli Powder - 1/2 spoon
10) Garlic - 2 cloves
11) Garam Masala - 1 spoon
12) Coriander Powder - 1 1/2 spoons
13) Urad Dal - 3gms
14) Mustard Seeds - 3gms
15) Cumin Seeds(Jeera) - 3gms
16) Oil - 2 spoons
17) Salt - as per taste
18) Turmeric Powder - 1/4 spoon

Procedure
1. Cut the Gobi into small florets and boil them until they are soft and keep aside.
2. Take besan into a bowl, add starch, red chilli powder, salt to it and mix well.
3. Add 1 cup of water to the bowl and mix thoroughly. Ensure there are no lumps in the mix.
4. Add the boiled florets to the bowl and mix until the florets are fully coated with the besan and keep the mixture aside for 20 mins.
5. Meanwhile cut the onions, green chilli, garlic, tomato and get ready for preparing gravy.
6. Take oil in a pan and heat it. Add mustard seeds to it and heat them until they splutter.
7. Add cummin seeds, chana dal, urad dal, red chilli to the pan and fry them until urad dal changes to light brown colour.
8. Add chopped green chilli, curry leaves, garlic and mix the ingredients well and saute for a minute.
9. Add onions and turmeric powder and fry them until onions turn white.
10. Add tomatoes to it and mix properly. Heat the mixture for two minutes until tomato gets fully smashed.
11. Add garam masala and coriander powder and mix all the ingredients well and saute for 2 mins.
12. Add the florets along with the besan to the pan and stir the ingredients well.
13. Add little salt to the mixture and mix thoroughly.
14. Keep the flame in medium and let it cook for 5 mins.
15. Gobi Besan is ready and server hot.

Tempered Yogurt (Kadhi)

Ingredients
1) Yogurt(Curd) - 1 cup
2) Green Chilli - 1
3) Red Chilli - 1
4) Mustard Seeds - 3gms
5) Ajvain - 5gms
6) Curry Leaves - 2
7) Turmeric Powder - 1 spoon
8) Oil - 1/2 spoon
9) Salt - as per taste

Procedure
1. Take Yogurt into a bowl and add 1 - 1 and half cups of water  and mix well and bring it to a uniform mixture without any lumps.
2. Add Turmeric powder, finely chopped green chilli, curry leaves, salt to it and stir well.
3. Take oil in a small pan and heat it. Add mustard seeds to it.
4. Once th mustard seeds splutter add ajvain and red chilli to it and fry them until ajvain starts spluttering.
5. Add the ingredients in the pan to the prepared yogurt mix and stir well.
6. Tempered Yogurt(Kadhi) is ready.

Note: It is known as Majjiga Popu in Telugu and goes well with Rice and Dal.
                     

Aloo Baingan Masala

Ingredients
1) Brinjol(Baingan) - 5
2) Potato(Aloo) - 1 big or 2 small ones
3) Onion - 1 medium size
4) Green Chillies - 2
5) Garlic - 2 cloves
6) Curry Leaves - 3
7) Coriander Powder - 2 spoons
8) Red Chillies - 2
9) Chana Dal - 3gms
10) Urad Dal - 3gms
11) Mustard Seeds - 3gms
12) Cumin Seeds(Jeera) - 3gms
13) Oil - 2 spoons
14) Salt - as per taste

Procedure
1. Cut Brinjol into medium sized pieces and soak it in salt water.
2. Cut potato, oninons, green chillies, garlic and keep them ready.
3. Take oil in pan and heat it. Add mustard seeds to the pan.
4. Once the seeds start spluttering add jeera, chana dal, urad dal, red chillies and saute until jeera splutters and the urad dal turns light brown.
5. Add garlic, green chillies and onion to the pan and saue until onions turn light pink.
6. Add curry leaves and mix the ingredients well.
7. Add Coriander powder to it and stir well. after few mins add salt and mix it well.
8. Add Aloo and then fry them in the mixture for 2 mins.
9. Drain water from baingan and add them to the pan and fry all the ingredients for 3 minutes keeping at medium flame.
10. Add water to the mixture(quantity : until all the ingredients are submerged) and mix thouroughly.
11. Keep the flame at low and close the pan with lid and simmer it for 10 mins. In between keep mixing the ingredients.
12. Once the aloo is properly cooked(should be soft) turn off the stove.
13. Aloo Baingan Masala is ready and serve hot.

Note: It is known as Vankaya Bangaldumpa koora in Telugu.

Banana Raspberry Cake

Ingredients
1) All Purpose Flour - 1 1/2 cups
2) Corn Starch - 1/2 cup
3) Condensed Milk - 1 can
4) Baking Powder - 1 tea spoon
5) Baking Soda - 1 tea spoon
6) UnSalted butter - 8 tea spoons or 1 slice
7) Whipped Cream - 1 cup
8) Confectioner(Sweetened) Sugar - 1/2 cup
9) Soda(coke, pepsi) - 150 ml
10) Vanilla Extract - 2 tea spoons
11) Red Icing
12) Banana - 1 big(or 2 small)
13) Raspberry - 8 table spoons

Procedure
1. Take butter in small pan and heat it until it becomes liquid.
2. Take condensed milk in a bowl, add liquid butter, stir thoroughly.
3. Smash the banana and mix it with condensed milk properly and keep it aside.
4. Take All purpose Flour in another bowl, add corn starch, baking soda, baking powder and 1/4 cup Sweetened Sugar to it and mix the ingredients well and ensure there are no lumps.
5. Take the liquid mix and add vanilla extract to it and stir thoroughly.
6. Take the powdered mix(Step 4) and mix with liquid mix(Step 5) along with Soda slowly and steadily. Stir the mixture until a thick viscous liquid with uniform texture is prepared.
7. Preheat the Oven for 350 degrees.
8. Take a cake pan and grease it with butter or cooking oil spray. Fill half the cake pan with above liquid and bake it for 20 mins.
9. Take out the cake once baked(insert a toothpick or small sharp thing to check. If the toothpick is clean without any liquid sticking to it, cake is baked).
10. Take whipped cream and remaining sweetened sugar in a bowl and mix well.
11. Cut the cake into two halves and apply the raspberry(4-5 spoons) uniformly on one half portion of the cake.
12. Combine both the pieces of the cake.
13. Apply the remaining raspberry  and the cream on the outer part of cake and spread uniformly. Cover the entire cake with the cream.
14. Can decorate the cake with red Icing as you like.
15. Banana Raspberry Cake is Ready.

Pineapple Cake

Ingredients
1) All Purpose Flour - 1 1/2 cups
2) Corn Starch - 1/2 cup
3) Condensed Milk - 1 can
4) Baking Powder - 1 tea spoon
5) Baking Soda - 1 tea spoon
6) UnSalted butter - 8 tea spoons or 1 slice

9) Pineapple thin slices - 20
10) Pineapple medium slice(round) - 1
11) Cherry - 1
12) Soda(coke, pepsi) - 150 ml

14) Red Icing
15) Pineapple flavoured water - 15 ml

Procedure
1. Take butter in small pan and heat it until it becomes liquid.

12. Can design the front portion of the cake with red Icing and place medium round pineapple slice in center and small pieced around.
13. Place Cherry in center of the cake.
14. Eggless Pineapple Cake is Ready.

Spanish Tomato Rice

Ingredients
1) Plain Rice - 1 1/2 cup
2) Vegetable Broth - 2 cups
3) Onion - 1 small
4) Garlic - 3 cloves
5) Tomato Juice - 1 cup
6) Salt - 1 spoon
7) Oil - two tea spoons

Procedure
1. Take 3 tomatoes and grind them in mixer to juice and keep it aside.
2. Take oil in a pan and heat it.
3. Add garlic and Onions(finely chopped) to the pan and Saute it until onions turn white or soft.
4. Add the plain rice(dry) to the pan and mix the ingredients well and heat them until the rice grains turn brown.
5. Add vegetable broth, tomato juice to the mix and stir well.
6. Heat the mixture until it starts boiling and then close the pan with lid and reduce the flame from high to low.
7. After 20 mins of low heat open the lid and stir the mix.
8. Spanish Tomato Rice is ready and serve hot.
