Spanish Tomato Rice

Ingredients
1) Plain Rice - 1 1/2 cup
2) Vegetable Broth - 2 cups
3) Onion - 1 small
4) Garlic - 3 cloves
5) Tomato Juice - 1 cup
6) Salt - 1 spoon
7) Oil - two tea spoons

Procedure
1. Take 3 tomatoes and grind them in mixer to juice and keep it aside.
2. Take oil in a pan and heat it.
3. Add garlic and Onions(finely chopped) to the pan and Saute it until onions turn white or soft.
4. Add the plain rice(dry) to the pan and mix the ingredients well and heat them until the rice grains turn brown.
5. Add vegetable broth, tomato juice to the mix and stir well.
6. Heat the mixture until it starts boiling and then close the pan with lid and reduce the flame from high to low.
7. After 20 mins of low heat open the lid and stir the mix.
8. Spanish Tomato Rice is ready and serve hot.

      Vegetable Broth is water flavoured with boiled vegetables like potatoes,carrot, beans, garlic, onions and bay leaves.

      To prepare it, take all the above ingredients into a pot/pan with oil at bottom and then add water and boil it. once they are finely boiled add salt or sauce to taste and again boil them for another 15 mins or so. then drain out the flavoured water(Vegetable Broth) into a vessel.
